I have a lot of leftover buttermilk pancakes, so I looked at it as an opportunity to be creative with the extras.
The pancakes are a little on the thin side, and one idea I had was of treating them like a crepe, here's what I did.

Buttermilk pancakes stuffed with spicy ham and onion, topped with fresh green beans and hollandaise sauce.

I snagged this buttermilk pancake recipe off the cooking group. It's Bette's recipe, I don't know who Bette is, but thank you Bette for concocting one of the tastiest, fluffiest, tenderest buttermilk pancakes I've ever had.

I was gifted some ham for Christmas. It's a little saltier than I'd like so I thought using it in a scalloped potato dish would be great, then I spied the sweet potatoes on the counter...Yes!!! sweet potato gratin.

Add a little tarragon, onion, gruyere and heavy cream. Yummylicious
