Mmm eggs scrambled with prosciutto, and what doesn't go good with prosciutto, and asparagus.
I wish I had time to make this every morning, that's how good these few simple ingredients are together.

The star of the show was the delicious scrambled eggs.
The plum on the plate I sliced with that cool little pickle knife I bought the last time I was at Sur la Table.
Don't know if you are familiar with the whole wheat Sandwich Thins or not, but that's about the only bread I buy anymore; It's great to make sandwiches with and it toasts up beautifully.

Look, only 3 ingredients, O.K. 4 if you count the butter or oil you use.
Give the asparagus and prosciutto a quick chop. Sauté the asparagus in a little butter, when the asparagus is cooked to your liking add the chopped prosciutto.
I cook the prosciutto only long enough to warm it, I don't care for crispy prosciutto.
Add two beaten eggs to the asparagus, prosciutto sauté and gently stir around until cooked to your taste. Me, I prefer softly scrambled eggs.
And that's that, easy peasy and oh, sooo good.
