When I placed my latest order with Penzeys Spices I also ordered a couple of peppers that were new to me.
I ordered some Tien Tsin China Chili Peppers and some Sanaam from India.
One nice thing, among many nice things, about about ordering spices from Penzeys is that recipe ideas are almost always included with spice.
One recipe on the label of the Sanaam peppers is a recipe for Chili Vinegar, wanna see how it's made?
The recipe calls for one ounce of Sanaam peppers to be chopped or cut up with scissors into a one cup jar.
I stared by cutting up a few peppers at a time into the jar. Then Duhhh,
I decided to put a bunch of the peppers into the jar and cut them up inside the jar, so much easier and faster.
Then I added a cup of red wine vinegar.
A pinch of salt.
Put the cap on, shook it up a little and set aside.
Now I'm to let it sit for a week, strain, and refrigerate in a bottle that has a splash top, like an old soy sauce bottle. It can then be thinned with more vinegar if needed.
This can be used in place of hot sauce. I can't wait to try it.
These pepper are 40,000 Scoville units.
