Trout fresh from the lake
I am the beneficiary of my neighbor's fishing skills. He came by a few days ago with 5 lbs of trout, just hours from the lake. I saw him out cleaning it, but never thought I'd be fortunate enough to have some within minutes.
Doesn't get any fresher than this. C'mon, lets see what to do with it.
My first thought was, oh boy, cornmeal, deep fry. As I was working with the fish, preparing some for the freezer and setting aside what I wanted to cook that night, I started to appreciate the freshness and texture of the fish. Dang, right out of the lake, how lucky am I. I changed my mind and decided a gentle "fry" in butter was what this fish needed. I dusted it with cornstarch and dried lemongrass.

Browned butter is one of my favorite indulgences. Once the fish was finished I added a little, o.k. a lot, more butter to the pan and browned it. Once the butter was browned I added a healthy splash of Pinot Grigio, a squeeze of lemon and let that reduce by about half.

I am not much of a fish eater but I have to say that I was drooling by the end of this post! I didn't think it was possible for me to crave trout! :-)

Thank you for your nice comments about the trout. It really is a delicious but terribly bony fish. I hope you try it sometime.
